Chef, writer and television personality Dale Chapman is a Kooma, Yuwaalaraay woman from western Queensland. Dilly Bag Pty Ltd  builds sustainable collaboration and consultation with Aboriginal peoples, communities of useful plants and bush tucker ingredients. She provides a platform to develop, market and distribute products, with a focus on creating pride for Indigenous people in their own culture, in a way that is non-threatening and non-judgemental to others. Her passion is to allow both Indigenous and non-Indigenous peoples to feel comfortable in learning from and about each other, in a way that clearly demonstrates mutual respect and acceptance. The career of Chris Jordan spans decades across catering and events within awarded fine dining restaurants and hotels throughout Australia and the UK. Chris has added expertise in fitness as well as a passion for nutrition and the performing arts. Since learning of his indigenous ancestry Chris has focused his work on native Australian ingredients and studies Indigenous Philosophy at University Of South Australia.

Both chefs focus on local produce, incorporating native and foraged elements to deliver a truly one of a kind menu and experience.
